Because wild vegetables have existed innature for ages,they have developed manyvaluable characters. For example,mostwild vegetables have stronger resistivity tobad environment,less prone to chemicalcontamination and contain abundant nutrient substances,as carbohydrate,protein,fat,fiber,various vitamins and minerals et al.
According to studies on 180 species of wildvegetables,those with a protein content of 2%(The content is edible part per 100 grams,samebelow) number 99 species,about 55% of thetotal,some even come up to 10%~12%,vitaminC is quite abundant in wild vegetables,withaverage content higher than that of commonvegetables,wild vegetables having a vitamin Ccontent of 50 mg or more include 89 species,about 49% of the total.
